However, "Cahors" is a protected designation of origin. To comply with international regulations, the Government of the Republic of Moldova decided to rename this category of wine to "Pastoral." Thus, Pastoral became the generic name for this type of wine produced in Moldova, distinct from the original French Cahors wines.

Pastoral wine contains more alcohol than regular wines (typically between 16% and 22?V). It is made from ripe, sweet red grapes — most often Rara Neagră or Cabernet Sauvignon. It is a dense, full-bodied wine with notes of candied fruit, dark chocolate, and dried plums.

The name "Pastoral" also carries a dual meaning: it evokes both religious symbolism and the idyllic rural life depicted in pastoral landscapes.
